Fish Tacos

This time, our celebration of Mexico’s culinary diversity features a recipe for fish tacos, the signature dish of Los Cabos.

This dish is among the many delicious lunch items served at Club Regina Los Cabos’ Altura Restaurant. As always, this recipe was provided by Raintree Executive Chef Hipolito de Anda.

➢ BAJA CALIFORNIA SUR

Fish tacos
Ingredients
• 30 flour tortillas
• 6 fish filets cut in strips
• 1 cup of flour
• ½ tbsp. of baking powder
• 1 tbsp. of mustard
• 1 can of beer
• 1½ liters of vegetable oil
• One pinch of oregano

Preparation:

Mix the flour, baking powder, oregano, mustard, and beer in a bowl. Cover both sides of the fish with the mixture and fry in oil in medium heat for about two minutes, or until the outside of the fish is a golden brown. Place the fish on paper towels to absorb any excess oil.

Heat the tortillas in a dry skillet over medium heat for 30 seconds on each side. Once heated, add the fish and serve. This dish is usually served with Mexican salsa, cabbage, and sour cream. This recipe serves six to eight people.
